He’s back in the saddle again. Yes, Robert Molines has returned to the Hunter Valley restaurant scene and is excited about the new venture he and wife Sally are embarking on at Bistro Molines located at Margan Cellar Door on Hermitage Road. Chef and proprietor of Bistro Molines, Robert is bringing a French style bistro to the Hunter Valley and the diners are benefiting.

“It’s a new start to my life and going back to basics with Sally and having total control of the kitchen without any partners is very exciting,” Robert explained. “Those who know me and know my food will also know that I expect them to come in and completely enjoy themselves by having a full lunch or dinner, and they do,” he said.

Offering fresh quality seafood and calling on his established relationships with local producers, the menu at Bistro Molines presents a number of dishes that Robert excels at delivering. Baby octopus salad, French pâté, fresh homemade pasta, brains, mussels, fresh fish, osso buco and all of your classic deserts like crème caramel, crème brûlée and quince tart.

“It is an ever changing menu and on top of the dishes available there are specials being created every day,” Robert said. “Bistro Molines is unpretentious and has been approached by us gently. It is good value, fresh, French cuisine and I’m really enjoying rediscovering my abilities in this new freedom I have here.”

The relationship between the Molines and Margan families goes back 30 years to when Robert came to the area and became friends with Frank Margan.

 “We are family and the restaurant takes on that atmosphere,” he said. “It’s a genuine family affair and Sally and I have always worked well together and enjoy working together. It was a decision that was made easier due to the warm welcome from Lisa and Andrew Margan and this made it easier to start from scratch.”

Robert spent time in Spain for a number of weeks after deciding to start Bistro Molines and returned to the Hunter Valley ready to continue servicing the area through his good food.

What is so exciting is that I’ve decided to stay in the Hunter,” Robert said. “This is my home and all our friends are here.”

Bistro Molines is open for Lunch Thursday through to Monday and dinner on Friday and Saturday nights.
